Costa del Azahar offer great cuisine to its visitors. Gastronomy varies with the
coast or inland towns.
Red mullet (salmonetes), Norway lobster (cigalas), shrimp
(gambas)and king prawns (langostinos), mixed seafood platters, stewed (zarzuela
de pescado), grilled sardines and variety of seafood dishes are the popular in
the coastal towns.
In addition, rice dishes, particularly paella in its
traditional meat or mixed chicken and shellfish versions is another “must”. Arroz a banda (rice cooked in the water used for the fish, but served as a
separate dish), el caldoso, al horno (oven-baked) and con verduras (with
vegetables) are other remarkable dishes. In Castellón, favorite dishes is the
coques (pizza-style bases).
The Castellón province is also famous with its
exceptional fruit and vegetables.
In the inland towns, meat and farm
products are popular. Charcoal grilled meat, such as rabbit (conejo) and
partridge (perdiz), cured ham and jerky (cecina), home-made cheeses, preceded by
starters such as sopa morellana and sopa forcallana are the popular dishes of
the inland towns.
As for the desserts, cuajada (rennet pudding), flan de almendras (cream caramel
with almonds) and requesón (cottage-style cheese) with honey as well as the
sweetmeats and pastries are popular.
